Timbale of shrimp from Sept-Îles and tomato confit, cilantro and red curry, served with yogurt flavoured with lemon, parsley and mint.
Appetizer
Verrine of smoked duck from Brome Lake, lentils salad with strawberries from the Gosselin farm, goat cheese crumble with boreal spices and beet chips.
Prelude
Homemade Bloody Mary concocted with a basis of greenhouse tomatoes from St-Nicolas, enhanced by a tarragon emulsion.
Main course
Tandoori of chicken from the Ferme des Voltigeurs and mushrooms sauteed with cumin and ginger.
Atlantic salmon seared with wild mustard butter and glazed with maple syrup from the Beauce Region.
Braised beef, cloudberry compote from the Lower North Shore and black spruce sauce.
Layered root vegetables, corn from Neuville and roasted tempeh of porcino, chanterelle, pholiota, shiitake and botetus mushrooms.
